openjfx14: correctly remove references to jdk11 ( #96298 )

The new version string for jdk11 contains a '+' character, which needs
to be escaped for use in the sed command.
Fixes #95117 .

treewide: use ffmpeg_3 explicitly if not wanted otherwise
...
After making `ffmpeg` point to the latest `ffmpeg_4`, all packages that
used `ffmpeg` without requiring a specific version now use ffmpeg_3
explicitly so they shouldn't change.
